Cancun, Mexico - Located in Mexico’s eastern most state of Quintana Roo

along the Yucatan Channel. Crystal clear waters and white beaches best

describes Cancun. Originally inhabited by the Mayan, this coastal city

is one of the top tourist locations in Mexico.

Carne Asada - Thinly sliced, marinated, and seasoned steak meat. Literally

means grilled meat.

Chile Relleno - Spanish for a stuffed chile. El Burrito Express’ chile rellenos

are stuffed with jack cheese, covered in an egg batter, and then flash fried

giving it a melted interior and a fluffy and warm exterior.

Chile Colorado - Refers to the name of the sauce that the meat is cooked in.

EBX’s chile colorado contains chunks of beef that is cooked in our colorado

sauce. The beef absorbs the sauce, giving it great texture and flavor.

Chile Verde - Like chile colorado, chile verde is the name of the sauce that

the pork is cooked in. Chunks of pork is slow cooked in EBX’s green sauce.

Chorizo - Mexican pork sausage made with chile peppers. Commonly used

with eggs but also makes for a good burrito filling.

texture. Most horchatas contain cinnamon, sugar, and sometimes vanilla.

Pico De Gallo - Spanish for the roosters beak, some say the name was

bestowed upon this condiment for the way in which it is eaten: picking like

a rooster uses its beak. Pico de Gallo is typically a mixture of chopped onions,

tomatoes, and possibly chile peppers and cilantro. Pico de Gallo can also

be made with fruit.

Pollo Asado - Seasoned, grilled and minced chicken. Literally means grilled

chicken.

Pollo En Salsa - Literally means chicken in sauce, EBX’s pollo en salsa is

made with white meat that is slowly broiled in our red sauce.¡Salud! - Cheers!

Tamal - A traditional Mexican dish made from masa (corn-based dough) and

stuffed with meat, chile peppers, or cheese. The tamal is then wrapped in a

leaf wrapper and is steamed and boiled. The leaf is removed before

Consumption.

Tomatillo Peppers - One of the peppers used in EBX’s green sauce. This

pepper is native to Mexico and it’s flavor can be best described as zesty and

tangy. In Mexico the tomatillo pepper is sometimes referred to as tomate

verde or green tomato.

Torta- A torta is a Mexican sandwich.

Tostada - The tostada, which literally means toasted, is a traditional Mexican

dish. At the base of the tostada is a deep fried corn tortilla. Pilled on top of

the tostada comes a variety of things- usually beans, meat, lettuce, tomato,

onions, cheese, sour cream, and sauce.

Veracruz, Mexico - Veracruz city is the oldest and most important port on

the Gulf of Mexico. Originally inhabited by the Aztecs, when Hernán Cortés

arrived to Veracruz in 1519, it was originally named Villa Rica de Vera Cruz

(Rich Village of Vera Cruz), due to the area’s large deposits of gold and also

because the ship landed on Good Friday. Veracruz was a constant target by

pirates due to the large amount of gold and silver exports. Due to Veracruz’s

large influx of imports and exports, the city enjoys a variety of Latin

culture.
